Horseradish Mashed Sweet Potatoes

Horseradish Mashed Sweet Potatoes
Serves 8

Ingredients:
2 pounds sweet potatoes (3 or 4)
2 tablespoons melted butter
1/4 cup Horseradish sauce
1 1/2 teaspoon salt

Preparation:
Preheat oven to 350 degrees. Place washed and scrubbed sweet potatoes on a baking sheet. Bake potatoes for approximately 1 hour. The potatoes are done when a fork pierces through the potatoes. When potatoes have cooled enough to handle, peel potatoes and place in a mixer. Add melted butter, horseradish sauce, and salt to the potatoes. Mix potatoes until smooth and creamy. Serve with additional melted butter if desired.

Additional Note by Robin:
You can make your own Horseradish sauce, rather than buying something like Heinz, by mixing a heaping spoonful of horseradish with a little mayonnaise. The amount of mayo depends on the heat of the horseradish and your own personal preferences to how hot you like your food to be. It also adds a little creaminess to something that’s not particularly creamy. Or, you can cheat and go to Arby’s and buy their Horsey Sauce :D.
